The spangled emperor is sometimes called north-west snapper or yellow emperor. The spangled emperor can live for more than 30 years. It can grow to 800 mm and 8 kg. It has a golden-brown body with blue spots on the scales of the upper body and blue bars or lines radiating from the eyes over the cheeks and snout. 5 stars. Spangled emperor are very popular among Arabian gulf countries due to their superior eating qualities. When raw, the flesh is translucent and white and when cooked becomes uniformly white. The fine, firm flesh is moist and flavoursome with a delicious sweet to mild flavour. It can be baked or steamed whole or filleted and fried, grilled, steamed, poached, barbecued or smoked. The frames make great fish stock for use in soups etc and the wings of larger specimens are delicious barbecued or deep fried in flour or batter.
